We tried this delicious couscous bowl from Heather & Lime and absolutely loved it! We decided to share it with you and we have made some changes to make it even more yummy to our taste and easy to prepare in the Air Fryer.

This was so easy to make and very healthy at the same time. Perfect for those days on which you do not feel like cooking, or when you just crave something simple, yet fulfilling.

Super healthy couscous bowl with shrimps, couscous and veggies. Prepared in the Air Fryer.

  • ¾ zucchini
  • 1 paprika
  • 125 g mushrooms
  • 200 g shrimp
  • 2 tsp Italian herbs
  • 150 g couscous
  • 150 ml water
  • 2 tbsp herb cheese


  • Air Fryer
  • Bowl
  • Pan (for couscous)


  1. Cut the zucchini, paprika and mushrooms into cubes and put them in a bowl.
  2. Add the Italian herbs and add salt and pepper to taste. Then shake well, so that all vegetables are seasoned.
  3. Put a pan with 150 ml water on the stove and add a little bit of salt.
  4. Bake the vegetables in the basket of your Air Fryer for 8 minutes at 180 ℃. Add the shrimps after 2 minutes. The vegetables will still be a bit crispy after 8 minutes, so if you like them a bit softer, you can make it 10 minutes (and add the shrimps after 4 minutes).
  5. When the water boils, take the pan off the pit and add your couscous. Use a fork to stir a bit until it has soaked up all the water (that takes about 2 minutes). Leave it in the pan.Shake the vegetables and shrimp several times for best results.
  6. Take them out, put them back in the bowl and add the herb cheese to finish up and serve.
  7. Easy as that!


  • 1 serving of couscous is 75 grams with 75 ml water (1:1).
