Zucchini Boats
Zucchini boats stuffed with veggies and cream. A super healthy and vegetarian Air Fryer recipe.

Ingredients
- 2 courgettes
- 1 eggplant
- 2 garlic cloves
- 2 medium-sized onions
- 1 paprika
- 2 tbsp herbal (cream) cheese
- 70 gr tomato paste
- 50 gr grated cheese

- Baking paper
Instructions
- Cut the garlic, paprika, onions and eggplant in small cubes.
- Cut the courgettes in half, lengthwise, and carefully scoop out a decent portion of the ‘pulp’ so that we can later fill the halves with the ratatouille. Cut the pulp into small cubes.
- Heat some (sunflower) oil in a pan and bake the garlic. Add the onion cubes shortly after. Add the rest of the vegetables after a minute with some salt and pepper and cook together for roughly 3 minutes.
- Add the tomato paste to the mixture and let it sit for another 2 minutes.
- Finally, add the 2 tbsp of herbal (cream) cheese and leave the mixture for 5 minutes. Meanwhile, you can place a piece of baking paper in the basket of the Air Fryer. When the ratatouille mixture is ready, it is time to fill the courgette halves and top them off with grated cheese. Be generous with the filling.
- Place the filled courgette halves on top of the baking paper and set the timer at 12 minutes at 180 ℃.
